In honor of the local Popcorn Festival going on this weekend (we have not one, but two popcorn factories in town – and so we celebrate), I share with you a kickin’ Popcorn Ball recipe from a good friend, Diane. Let me tell you, once you make these tasty treats, you’ll never go back to that old, hard, nasty version of a popcorn ball again…
1/2 cup brown sugar, packed
1/2 cup dark corn syrup (but light works, too)
1/4 cup butter
8 cups popped popcorn (or 1 3oz. bag of microwaved)
I usually double or triple this recipe. A single batch makes about 10 balls which doesn’t go very far around here!
Heat everything but the popcorn until simmering, stirring constantly. Remove from heat. Put popped corn in a large bowl or soup pot (make sure & get all the unpopped kernels out before stirring in the other ingredients – those suckers are hard on the teeth!). Pour the heated ingredients over the popcorn & stir a bit. Let it cool down a minute. Stir until all popcorn is covered. Wet hands & form balls. Let them dry on waxed paper, then wrap in seran wrap.
At Christmas, it’s fun to wrap some in red seran & some in green. These make easy treats to take in for class parties, etc.
