Being both a total potato freak (love ‘em every way but raw), and a lover of candles, this holiday has always been a much anticipated one at our house. Not to mention the obvious correlation of Jesus being the Light of the world to the Festival of lights. I love our Jewish roots as Christians!

Hanukkah Latkes

4 large raw potatoes, peeled & grated (although I usually don’t peel them – I like the skin)
1 medium onion, grated
1 egg
1/2 teaspoon salt
1/4 teaspoon pepper
3 Tablespoons flour
oil

Soak the grated potatoes in water until all are grated – this keeps them from turning brown. Heat skillet to 375 degrees. Squeeze the excess water out of the potatoes & add the onion, egg, salt, pepper, & flour to the potatoes. Shape into patties with your hands. Put into hot oiled skillet & cook like a pancake. The only difference is these will take about twice as long to cook through. Serve with sourcream or (traditionally) applesauce.
